The Wildboar Festival (Sagra di Suvereto) in the medieval Tuscan town of Suvereto, nearby Livorno, is a 10 day festival starting on November 29h and lasting through December 8th, when there's usually big party.
Besides typical gastronomy, you'll find other products from the area including wine, wild boar, olive oil, and honey. The festival includes medieval pageants and medieval competitions.
On December 8th (Feast Day of the Immaculate Conception) there will be the historical medieval commemoration of the "Charta Libertatis" .
