

It is a typical Italian dish, usually eaten either as first course or as main course, extremely tasty and containing vegetables.
Ingredients: tuscan stale bread, pinto beans, celery, carrots, parsley, courgettes, yellow pumpkin, onion, tomatoes, salt, pepper, oil, a stock cube
Directions:
Cook the pinto beans in salted water. Chop the vegetables and cook them in the olive oil. Add the beans with some of their cooking water and let it boil for 2 hours. Slice the bread and put it in a large bowl, then pour the vegetables and their stock on it.
