

Ingredients: small cep mushrooms, extra virgin olive oil, garlic, mentuccia thyme, egg yolks, lemon juice, meat stock, salt and pepper.
Directions:
Clean the mushrooms and slice them into thin slices.
Make the garlic get brown in a terracotta pot together with oil and mentuccia thyme. Take the garlic away and put the mushroom into the pot.
Add salt and pepper and let it cook over a low flame, mixing once in a while and adding some meat stock.
When the cooking's finished add the yonks with the lemon juice. Turn off the flame and mix.
