Bomboloni Doughnuts

BomboloniBomboloni are a sort of Italian doughnuts, filled with cream, jam, or chocolate, and sprinkled with caster sugar.

- 1 kg flour
- 800 gr boiled potatoes
- 100 gr caster sugar
- 1 pinch of salt
- 1 egg
- 1 gr vanillin
- yeast
- 50 gr butter
- frying oil

Boil potatoes and mash them. Let them cool.
In the meanwhile mix all the other ingredients, except oil and sugar. Add the mashed potatoes and make small balls out of the dough. Let them rest for 2 1/2 hours.
Fry them in a deep pan and immediatly roll them in the caster sugar.
Fill them according to taste.
